I was recently asked if I was to recommend a 'universal' wine what would it be. Without a moment of hesitation, I blurted out Riesling. Why? Well... Firstly, it is an elegantly poised variety that seldom puts a foot wrong - even with new wine drinkers. It's light freshness and acidity complements a variety of food, making it the perfect companion at the dinner table without compromising character.
If you're not overly confident about pairing wine with food, goat's cheese is a great place to start. It is one of the easiest flavours to pair. Most unoaked wines are great partners, the one you select depends on personal choice and the time of year.
October mornings are when we really being to see autumn in its true beauty. There is nothing I love more, than wrapping up warm, putting on my wellies and strolling through the endless hues of red, orange and gold. The tangy goats cheese contrasts well with the sweetness of the beetroot on a light puff pastry base; perfect with some roast veg to create a hearty lunch to end the morning.
